Navy Bean Soup - Recipe

Ingredients:

  • 2 qt Beef Stock
  • 1 tsp Red Wine Vinegar
  • 1 Bay Leaf
  • 12 oz Navy Beans
  • 1 tsp Chopped Parsley
  • 4 oz Chopped Onions
  • 1/2 oz Chopped Garlic
  • 1/2 c Diced Celery
  • 1/2 c Diced Carrots
  • 1/2 c Diced Leeks
  • 1 Sprig Fresh Oregano
  • 1 Sprig Fresh Thyme
  • 1 tbsp Olive Oil
  • Salt & Pepper To Taste

Directions:

  • Soak navy beans in water for 10 - 12 hours.
  • Sauté garlic, bay leaf, onions, carrots and celery in oil for a few minutes.
  • Boil beans in beef stock, add vegetables.
  • Simmer for two to three hours.
  • Season with salt and pepper.
  • Finish with red wine vinegar, chopped parsley, thyme and oregano.
