Gazpacho - Royal Caribbean International


Gazpacho - Recipe


Serves: 8


Ingredients:

    Gazpacho:
  • 2 cups (480 ml) tomato juice
  • 1/2 cup (120 ml) water
  • 1/4 cup (60 ml) red wine vinegar
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1 small red onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 cup (60 g) breadcrumbs
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) celery salt
  • 1 tablespoon (15 ml) Worcestershire sauce Tabasco sauce, to taste

  • Crostinis:
  • 1 French baguette, sliced
  • 2 tablespoons (30 ml) extra virgin olive oil

  • Garnish:
  • 1 small red onion, diced
  • Parsley

Directions:

  • Preheat oven to 350 degrees F or 175 degrees C
  • Mix all ingredients into a large glass bowl. Cover and refrigerate overnight.
  • For crostinis, brush bread slices with olive oil. Place on a baking sheet and bake in the oven until golden around the edges.
  • Pass gazpacho through a sieve and pour into individual martini glasses
  • Garnish with red onion and parsley. Serve with crostinis and assortment of olives
