Ocean Suite Differences

Keep be numerous reasons. If you could identify a ship and room number that would help.

Carnival Freedom. I booked 7329 and 7333 for my son and his family, but they would not let me and my wife have 7325 - they want to put us in 7249.

Most likely because the number of available Ocean View rooms that can accommodate 3 people dropped below a certain number (likely after your first 2 rooms went into the system, assuming they aren't each being occupied by 3 people). Cruise lines like to cruise with as close to maximum capacity as possible so they will try to fill cabins with their maximum occupancy. Typically the further out from your departure date it is, they try to keep as many cabin/occupancy options open as possible for new bookings coming in. Since there are only going to be 2 people in your cabin they most likely gave you the closest Ocean View room to the others that accommodates only 2 people (7325 can accommodate 3).

You can always try switching rooms closer to your cruise date.

So I guess the answser to my question is "Yes, not all Ocean Suites are created equally - some do not have a couch a person can sleep on"?

Yes, they are not all created equally. Some cabins have an additional couch that folds out, others may have a raised (bunk) bed that folds out from the wall.

Cabin 7325 - accommodates 3 persons. The 3rd person in this cabin sleeps on a single fold out couch. Video attached below is of Carnival Freedom Cabin 7325.

Video is from Sept. 2014. Carpet, bedding, curtains, etc. have likely changed at least once since the video was taken.
