Carnival Cruise Lines' Tapenade Recipe

1 Garlic Clove, crushed
1 Lemon – juice only
3 Tbsp of Capers, chopped
6 Anchovy Fillets, chopped
250g/9oz Black Olives, pitted
Fresh Parsley, small bunch chopped
Salt and Pepper, to taste
2-4 Tbsp Extra Virgin Olive Oil
Thoroughly rinse the olives in cool water.
If using a food processor, stop to scrape down the sides of the bowl until the mixture becomes a coarse paste, approximately 1 to 2 minutes total.
Transfer to a bowl and serve.
