Royal Caribbean International's Gazpacho Recipe

2 cups (480 ml) tomato juice
1/2 cup (120 ml) water
1/4 cup (60 ml) red wine vinegar
1/4 cup (60 ml) extra virgin olive oil
1 small red onion, chopped
2 cloves garlic, chopped
1/4 cup (60 g) breadcrumbs
1 teaspoon (5 g) ground cumin
1 teaspoon (5 g) celery salt
1 tablespoon (15 ml) Worcestershire sauce Tabasco sauce, to taste
1 French baguette, sliced
2 tablespoons (30 ml) extra virgin olive oil
1 small red onion, diced
Preheat oven to 350 degrees F or 175 degrees C
Mix all ingredients into a large glass bowl. Cover and refrigerate overnight.
For crostinis, brush bread slices with olive oil. Place on a baking sheet and bake in the oven until golden around the edges.
Pass gazpacho through a sieve and pour into individual martini glasses
Garnish with red onion and parsley. Serve with crostinis and assortment of olives
